drivers side pic top of shoes are not aligned together ? did the shoes get all mixed in ? whilst diff was apart ?
check the width of the shoes to the center of the v in the brake shoes make sure both are the same on each side if there not then shoe tends to push out on 1 side and as you tighten the wheel up it will begin to bind. (just trying to help)
no form of media in the back of the drum grooves?

gremlin found  ;) it appears to be the drum inner leading edge of the recess rubbing against the inside of the curve of the brake mounting plate, tightened drum onto axle & rotated with a length of pipe...nice scrapey sound... pulled drum off n looked for evidence. notice fresh grind on inner curve

Ok good dicktecktive work you cunning marsupial you.

Now to me that indicates either narrower bearings or miss assembled backing plate, did you take the backing plate off when you did the bearings ?.

I think you fitted ya new bearings on backwards some have a deeper offset on one side seems like the best conclusion to me but the bad news is its almost impossible to get em back off without wrecking em  >:( but I would be lookin there   Cheers Neil
