8mm would probably be fine strength wise, however are you able to just take a grind on the appropriate area?
The part that was an issue for me was the inner edge of the actual pad contact face.
It sounds to me like you need to take a bit more out of the bracket if its rubbing on the centre area.
Hopefully Rogue or Busy can clear this up for you, however feel free to post some pics ;)

My engineer specified 10mm but its not going to work the way it is currently setup. I delivered a stud, the plate and the rotor to him today to sort out for me. I'll be interested to see what he comes up with.

I'll stick the calipers on the plate when I get home tonight and get you a measurement. The calipers are off at the moment so that'll be easy peasy.

Couldn't quite get the calipers (measuring calipers that is) onto the mounting plate so I did it with my ruler and eyeometer. The mounting plate is 8mm thick.

Hey Rogue, how is that adapter plate bolted on? Do those 4 bolts thread into the plate without using nuts?

Yes I'm pretty sure all the holes in the plate were tapped.
